'How do you understand all those complicated scientific studies and all that gobbledygook in medical journals'? Its a question I get asked all the time.
Other people say you probably shouldn't provide an opinion on dietary science unless you can at least understand a simple multi-variate ANOVA analysis like this one:
And of course, they would be absolutely right!
Now, granted most chefs don't know their bell curves from their bell peppers, their root mean square error from their root vegetables, and they don't know their poisson distribution from their .... hmm, I can't think of a food-related pun for that one.
Never-mind, the point is that when you level-up to a celebrity chef you are automatically granted the powers of interpreting scientific studies with perfect clarity - often discovering findings completely at odds with the study's authors and supervisors, which always happen to be in line with my pro-paleo views.
That's why every scientific study I look at 100% supports paleo and any study you mention supports paleo 200%!
Now, I admit that doctors and dietitians also have to study a certain small amount of research and statistics too, but this is all learning from textbooks and SPSS, not from the hell-fire of working in a real commercial kitchen.
